Basil Tomato Tart

The Ingredients

TART CRUST

1 1/2 cups almond flour

1/4 cup coconut flour

1/4 tsp baking soda

Pinch of salt

1/4 cup cold water

1/2 tsp vanilla extract

1 tsp honey

1 Tbsp coconut oil, melted

FILLING

4 whole large tomatoes, sliced

1/4 red onion, thinly sliced

2 cloves garlic, sliced

1/2 Tbsp extra virgin olive oil

1 Tbsp chopped fresh basil

1/2 tsp red pepper flakes

2 Tbsp toasted pine nuts

Method

Preheat oven to 350 degrees F.

To make the tart crust, mix together almond flour coconut flour, baking soda, and salt in a medium sized mixing bowl.

Stir in the cold water and vanilla extract. Mix in the honey and coconut oil, making sure there are no clumps in the dough. You can use a fork to mash out any clumps.

Press the mixture into the bottom and up the size of a 9-inch tart pan. Bake for 15 minutes.

Remove the tart crust from the oven. Layer the sliced onion and garlic on the bottom of the tart.

Create a layer of tomatoes on top of the onions and garlic, slightly overlapping them as needed. Drizzle with olive oil.

Bake for 30 to 35 minutes.

Sprinkle over basil, red pepper flakes, and pine nuts. Serve warm.
