Blueberry & Coconut Smoothie

This is the ultimate breakfast smoothie, it’s full of health-enhancing ingredients, and is so wonderfully energising. Blueberries are one of my favourite fruits, so i love that they play the starring role in this smoothie. The smoothie is then topped with dollops of my homemade raw coconut yoghurt, which makes for a really creamy treat.

Blueberries have one of the highest antioxidant levels in the world, and the highest among all its fruity friends. Antioxidants are incredibly anti-inflammatory and fight disease inducing free radicals in our body. Meaning they’re incredibly anti cancerous! They also have a Low GI, which helps to keep your blood sugars well balanced, keeping you energised for longer. The banana acts as a base flavour, and helps to thicken the smoothie and make it really filling and nutrient dense. Bananas are great for healthy bones. There high potassium content protects against calcium loss, common in a modern diet high in salt. They also work to feed good bacteria into the gut, which increases the ability for the body to absorb key nutrients like calcium, essential for good bone health. We blend this with omega rich chia seeds, sweet medjool dates and refreshing coconut water.

The Ingredients

1 banana

1 cup (frozen) blueberries

1/2 – 3/4 cup coconut water

2 medjool dates

1 tablepsoon chia seeds

Coconut yoghurt to top

Method

Pit the dates and add all the ingredients for the smoothie to the blender, blend until smooth. Top with homemade coconut yoghurt, frozen blueberries and a little sprinkle of bee pollen if you like!
