Miso Roasted Salmon with Chilli & Lime infused Courgetti

This recipe is one of my favourite dinners, with some bold flavour profiles. The dishes that work the best in my mind are those that have two flavours working in opposition; Salty and tangy, Rich and fruity and so on. The salmon is made combining tangy lime with salty miso, spicy chilli and sesame seeds,  some strong flavours, but thanks to the light, refreshing raw courgetti it’s not overpowering.

The recipe has very few ingredients and isn’t overly fussy, so I very attainable weeknight meal. You can switch out the courgetti for a brown rice noodle if you’d like something a little heartier.

 

 

The Ingredients

2 salmon fillets

4 courgettes

1 large aubergine

2 tsp miso paste

4 tablespoons black sesame seeds

Juice 2 limes

1 tsp minced fresh red chilli

a handful of coriander, minced

olive oil for roasting

 

 

Method

Preheat the oven to 190 degrees celsius.

Start by preparing the Salmon and Aubergine. For the aubergine simply chop into small cubes and place on a roasting tray lined with aluminium foil. Drizzle with olive oil and season with a pinch of salt.

For the salmon, start by making the sauce. Juice one lime into a bowl, mix in the teaspoons of miso paste, and throw in the minced chilli. Make sure to taste the chilli first as every one varies, so you may need more or less. Place both the salmon, skin down, on two separate pieces of aluminium foil on one roasting tray. Fold the sides of the foil up so the marinade doesn’t spill out when you pour it in. Pour the liquid mixture over each salmon fillet, making sure to coat the top evenly. Spoon two tablespoons of the sesame seeds over the top of each fillet and sprinkle a little pinch of salt.

Pop both trays in the oven to cook for around 20-25 minutes. Check the salmon is cooked in the middle before removing from the oven.

Meanwhile make the courgetti using a spiraliser. If you don’t have one you can use a peeler pressing quite hard to create thick strips. Mix the Juice of the other lime into the spaghetti, with the minced coriander and a drizzle of olive if you like. Season well with salt and pepper.

Once the salmon and aubergine are done, mix the aubergine into the courgetti and top with the Salmon.

A simple, fresh, spring dinner.
