Spiced Carrot, Lentil & Coconut Soup
serves 4 cooks in 30 mins difficulty one

The Ingredients

2 large carrots, chopped into thin rounds

1 white onion, minced

1 cup red lentils

1 cup coconut milk

3 cups vegetable broth

1 teaspoon of fresh ginger, minced

1 teaspoon turmeric

1 teaspoon cumin

1/8 teaspoon chilli flakes (to tase depending on spice)

Salt & Pepper to taste

1 tbsp olive oil

 

Method

In a large saucepan add a drizzle of olive oil and the minced white onion. Fry until the onion is soft. Add the red lentils, carrots and vegetable broth. Bring to the boil and reduce to a simmer. Cook for around 25-30 minutes until the red lentils are soft. Add to this mix to a blender along with the coconut milk, turmeric, cumin, chilli flakes and fresh ginger. Blend until smooth and serve.
