Sweet & Spicy Sesame Stirfry

Sometimes the easiest things to make are the tastiest. It doesn’t have to be a ridiculously complicated recipe with trillions of spices and fancy ingredients to be truly delicious. I’m always after something scrumptious but simple, a week night meal to make with ease. This recipe is exactly that.

The rice noodles make our base (you can use any noodles, quinoa or brown rice) the vegetables are all sautéed and covered in a delicious sweet and spicy sesame sauce. It’s a taste sensation!

The Ingredients

2 servings rice noodles

1 cup mushrooms, sliced

1 large head of broccoli, chopped

1 cup chopped or sliced carrots

2 courgettes

2 cups of spinach

1 cup frozen edamame beans

Sauce:

1/4 cup tamari

2-3 tablespoons raw honey (agave or maple work too!)

1/4 cup vegetable stock

1 teaspoon Sriracha sauce (substitute with any other hot sauce if you don’t have Sriracha)

Method

Prepare and chop all the ingredients.

Mix together the ingredients for the sauce.

Cook the noodles as per the instructions. The rice noodles I use take around 10 minutes to cook until nice and soft!

Add some coconut or olive oil to a pan and sauté the vegetables, add them all together and cook until soft. Once soft add in the sauce.

Drain the noodles when done and mix in with the vegetable mix, plate & serve!
