Something I love to do on the weekend is take a little time out of my day to prepare for the week ahead. Whether this be making batches of quinoa, lentils and hummus for a lunch on the go, writing a shopping list or making some supercharged snacks to power me through the busy days ahead. Preparation is honestly key when it comes to maintaing a healthy lifestyle, and is also vital when it comes to keeping energised during a long workout. Training as a ballet dancer the majority of the day (everyday), means i often don’t have any time to pop out to grab a smoothie or snack making preparation a complete necessity! My latest favourite thing to make are these mulberry & apricot energy bars – This combination is pretty other worldly, sweet & delicious, packed with nutritious ingredients. I love doubling the batch and freezing them, so I always have something to snack on.

The Ingredients

1 cup dried apricots (unsulphured)

1/2 cup dried mulberries

2 cups cashew nuts

1/2 tsp fresh ginger

OPTIONAL:

2 tsp Baobab Powder

*Note: you can make these bars using a combination of apricots with any other dried fruit, don’t feel restricted to mulberries! Experiment!

Method

Start by pulsing the cashews until small chunks (but not a flour) add all the other ingredients and continue to blend. After a few minutes, once everything is combined and sticks together you can stop the blender. Take out the raw mixture and mould into energy bars. Store in an air tight container.
