Lavender Lemon Glazed Cookies

As spring comes and we say goodbye to winter spices we look to lighter citrus flavours, which may mean it’s time to replace your classic cinnamon and raisin cookie combo with these Lavender Lemon Glazed cookies; The perfect tea time treat!

 

The Ingredients

Lavender Cookies

2 1/2 cups almond flour

1/4 cup maple syrup

1/4 cup applesauce

1 tsp baking powder

1 tsp vanilla extract

1/2 tsp lavender extract

Pinch of salt

Garnish: dried lavender flowers

Lemon Glaze

2 Tbsp coconut oil

2 Tbsp honey

2 Tbsp milk of choice

zest and juice from 1 lemon

1/4 tsp pure vanilla extract

Method

Preheat oven to 350 degrees F.

In a large bowl, combine all ingredients for the cookies. Stir well until the combination forms a dough.

Lightly dust a clean work surface with almond flour. Place the dough on the work surface and roll out to 1/4-inch thick.

Cut the cookies into rounds or any shape you like!

Add the cut cookies to a baking sheet lined with a silicone mat or parchment paper.

Bake for 12 to 15 minutes. Remove from oven and cool completely before glazing.

To make the glaze, mix together glazed ingredients in a small saucepan over low heat. Once simmering, remove from heat and let cool while the cookies are cooling.
