This dessert is a treat for the taste-buds, and your digestive system! Packed with fibre pectin from the apples and gooseberries – Fibre is essential in maintaining a healthy digestive system. It also helps to regulate bowel movement, stabilise blood sugar levels and keep you fuller for longer! The ginger is a great natural anti-inflammatory, and is incredibly soothing to the stomach and calming to the digestive system.
The Ingredients
3 apples
1/2 cup gooseberries (If you can’t find these you can use red grapes)
1 thumb sized knob of ginger, pealed and grated
2 tablespoons of coconut nectar
2 tablespoons of coconut oil
The Cream:
1 cup of cashew nuts (soaked overnight or for two hours if possible!)
1/2 tsp vanilla powder
1/3 cup water
Method
Peal the apple, and slice into thumb sized cubes.
Chop the grapes in half
Add the grapes, apple, grated ginger and coconut oil to a pan. Once the coconut oil has melted and it begins to simmer stir well.
Continue to cook through until the apple and grapes are incredibly soft.
Meanwhile add the cashews, vanilla powder and water into a blender and blend until smooth. Pour into a bowl, and rinse your blender out ready to use again.
Add the apple mix into your blender and lightly pulse until it’s a chunky puree.
To compile add the apple & ginger compote to the bottom of a glass, or jar, and top with a generous amount of the cashew cream. Enjoy hot, or cool!
