Avocado cream is one of my go-to sides for any meal, it’s so incredibly delicious, creamy and nourishing and is the best replacement for mayonnaise ever! Just like good ol’ mayo, avocado cream adds a subtle but delicious creamy flavour to just about anything and adds some amazing nutrients too! It’s also lighter, and fresher from a touch of the alkalising lemon juice.
Avocados are an extremely concentrated source of energy, and health-enhancing nutrients, and are bursting with healthy fats which promote the growth of strong, lean muscles. They’re also loaded with potassium and magnesium which are essential for muscle recovery, and vital for athletes. Avocados are also a great source of fibre, with one avocado containing 11 grams, which is close to half your recommended intake! They are also just the most amazing skin food, because of the high omega content. An avocado a day certainly does keep the spots away!
This delicious dip is so perfect with roasted sweet potato wedges, as a side to a risotto, a quinoa dish, a rainbow salad, spread on toast, or simply with vegetable crudités. You honestly can’t go wrong.
Juice 1 lemon
2 tbsp olive oil
1 tbsp water
pinch of salt
Remove the avocado flesh from the skin, and add everything to your blender/food processor. Blend until smooth!
