Baked Blueberry & Banana Oats

When people say “you are what you eat” I immediately think I’d be the lovechild of oatmeal and avocado toast. Both things I eat in excess! Oats are such a diverse food, I eat them almost every morning in Porridge, Smoothies, Overnight Oats and even ground as a flour in breakfast muffins. Another way I love to eat them is baked with lots fresh berries, banana and other sweet additions like maple and almond butter. It’s nice to switch things up from time time, and this is a great way to make your breakfast routine a little more interesting.

The Ingredients

1 cup oats

1 cup of blueberries

2 banana

4 medjool dates

1/4 a cup of almond milk

2 teaspoons of cinnamon

1 tablespoon of pure maple syrup

1 tablespoon of almond butter

Method

Pre-heat the oven to 190C.

Place the oats in a bowl, covered with boiling water.

Meanwhile slice the bananas.

After the oats have been sitting for 20 minutes stir in all the other ingredients. Divide into four little pots or one large pot.

Pop in the oven to bake for 20 minutes, until golden on top.
