Blueberry & Banana Breakfast Hot-Cakes

I’m a big fan of Overnight Oats, and have been ever since I started Naturally Sassy – not only was that are a really significant period because It was when I started exploring new healthy recipes, but it was also the moment my life went from fairly busy to incredibly busy! Overnight Oats were a complete saviour, something I could make in next to no time the night before and enjoy on the go effortlessly – this is still something I do today, and in fact I have a whole section on them in my upcoming Cookbook! A few weeks ago I woke up on a Sunday desperate for something ‘brunchy’ to eat which is when I noticed a jar of overnight oats sitting in the back of my fridge – I was inspired! I combined the already delicious banana-vanila overnight oats with blueberries and cooked them until crispy and utterly delicious over the heat in coconut oil. It was sensational, particularly when drowned with the incredible almond butter drizzle! That moment of inspiration has turned into something I know I’ll be having weekly, and experimenting with often. I know it does seem a little tedious to have to prepare the night before, but it takes no time at all. Soaking the oats also helps to unlock all the incredible nutrition, and makes it much nicer on your digestive system!

The Ingredients

2 bananas

1/2 cup blueberries

1 cup oats

1 cup dairy free milk

1 tsp vanilla essence

2 tablespoons coconut syrup/pure maple syrup

ALMOND BUTTER SAUCE:

4 heaped tablespoons almond butter

4 tablespoons melted coconut oil

2 heaped tablespoons coconut/maple syrup

Method

The night before: Mash the bananas until a smooth paste. In a bowl combine the dairy free milk, vanilla essence, syrup and oats. Leave overnight!

In the morning: Add a tablespoon of coconut oil to a frying pan and once melted add a few large dollops of the mixture, flattening it down into a circle and pressing a few blueberries in the middle. Let it cook for around 4 minutes on each side until beautifully golden. I make about 2 at a time, and then place them on a tray to stay warm in the oven. Repeat with the rest of the batch. Stack with banana slices, fresh blueberries and the almond butter sauce. To make the almond butter sauce simply mix all the ingredients stated!
