Sometimes simple, back to basic ingredients can be the most delicious. At the moment I’m all about meals and sides that are delicious entirely because of the wonderful flavours each individual ingredient brings. This broccoli, avocado, & pistachio salad with an almond butter lime dressing is exactly that, you can taste every flavour yet they come together to create something really very special. I absolutely love it served on top of some lemon infused quinoa, or with some roasted sweet potato wedges and paprika butternut squash. This recipe acts as a base for some delicious culinary experiments, and I’m finding new ways to serve it every time I make it!

Not only does it taste really fresh and delicious, but this meal is also brimming with goodness. Broccoli in fact one of the best sources of Vitamin C, even higher than most citrus fruits. They are also rich in beta-carotene antioxidants, making broccoli an ideal immune boosting addition to your diet. Broccoli is an incredibly detoxifying food, containing a combination of phytonutrients, which neutralize and eliminate un-wanted materials in the body. This re-vitalises your body, improving digestion, metabolic function and energy levels. Avocados are one of the most amazing foods as they contain 25 powerful nutrients including Vitamin A,B,C,E, & K, copper, phosphorus, magnesium, potassium and iron. All in all, you’re looking at one incredibly nutritious meal.


The Ingredients

1 bunch/ 2 large handfuls tender stem broccoli

1 Avocado

1/4 cup pistachio nuts


1/2 garlic clove

2 tbsp almond butter

2 tablespoons fresh lime juice

1/2 tablespoons low-sodium tamari

1 tablespoons water

1/4 teaspoon maple syrup (optional)


Start by steaming the broccoli. Whilst the broccoli is steaming away, make the dressing by simply combining all the ingredients and mixing until smooth. Then open the avocado and slice into chunky cubes.

Compile by laying the steamed broccoli on your plate, the avocado cubes, scattered pistachio nuts and drizzles of your almond butter-lime dressing.

Serve with quinoa, sweet potato wedges and any other hearty additions you enjoy!
