Broccoli Rice? Seriously? Oh yes! This is an awesome way to get some calcium packed greeny goodness into your diet, and acts as a wonderful base for curries or warm salads. Broccoli is an incredibly detoxifying food, containing a combination of phytonutrients, which neutralize and eliminate un-wanted materials in the body. This re-vitalises your body, improving digestion, metabolic function and energy levels.
I’m absolutely loving this recipe at the moment – it’s a perfect recipe for this fluctuating weather, a real mixture between warm and comforting and fresh and summery! Another wonderful thing about this recipe is the sheer simplicity of it, it literally takes under 10 minutes to make, and all you need is a food processor/grater and a steamer! I’m also obsessed with adding roasted sweet potato wedges to this, it really makes it even more delicious.
The Ingredients
Head of one large broccoli
1 avocado, cubed
1 cup tomatoes, halved
1/4 cup pistachios
Juice of 1 lemon
1 tbsp tamari
2 tsp light tahini (optional)

Method
Grate or process the broccoli florets until they resemble rice grains. (The fastest way to do this is in a food processor), pulse to make sure it’s not over-processed, you don’t want a paste! Steam the broccoli rice until cooked through and add to a bowl.
Mix with the lemon juice, tahini if using and tamari. Then add the avocado, tomatoes and toasted pistachios.
