Cookies are one of my favourite sweet treats; My favourite part about eating cookies is how well they go with a cup of tea – you know that feeling when you dip it into your tea just enough to soften….mmmm, so satisfying! These cookies are packed full of flavour and texture. Rich and chocolatey from the cacao, nutty from the pecans and chewy from the oats. We grind up oats and pecans to make a crumby flour and add in medjool dates and raw honey (or maple) as a binder. Rolling them out into cookies and putting them in the oven to bake, not only will you have something yummy to snack on, but your kitchen will smell like a dream.
The Ingredients
2 cups oats
2 cups pecans
3/4 cup medjool dates, pitted
3-4 tablespoons cacao
3-4 tablespoons raw honey/maple
pinch of salt
coconut pieces to press into the top
Method
Preheat the oven to 170 degrees celcius.
Put the oats and pecans into a high speed blender or food processor, and process until a chunky crumb.
Now add in the cacao powder, a pinch of salt, honey or maple syrup and medjool dates. Process until everything totally combined and almost like a raw dough.
Line a baking tray with parchment paper. Take out the blender, and make into 8 separate balls. Roll them in your hand before pressing down into a flat cookie shape. If you fancy you can press in some coconut pieces to each cookie. Pop in the oven to cook for 25 minutes until golden and perfectly crunchy.
