A few weeks ago I had the pleasure of hosting the ‘Introduction to Clean Living’ blogger event in collaboration with ao.com. It was such a fun event, with a rejuvenating yoga class followed by a demo I lead using Sage appliances amazing health grill. The recipe I’m sharing with you today, was what I came up with – as, as soon as I heard grill I knew I wanted to make something that tasted like a cheese toasty, but benefited you ALOT more! Instead of cheese we use a cashew cheese thats full of calcium, plant based protein and skin loving omegas – Ok, so it doesn’t taste exactly the same but in my opinion it’s not too far off, and is mighty addictive (be warned).
NOTE: IF YOU DON’T HAVE A HEALTH GRILL YOU CAN BAKE THEM IN OVEN, OR TOAST INGREDIENTS
The Ingredients
Two Gluten Free Tortilla Wraps
2 plum tomatoes
1 big handful of basil
CASHEW CHEESE:
1/2 cup cashew nuts
1/3 cup water
1 tsp tahini
1/2 clover garlic
1/3 cup nutritional yeast
a generous pinch of salt
You can substitute the cashew cheese, for Hummus.
GUACAMOLE:
1 Avocado
Juice 1 lemon
half a dozen cherry tomatoes
pinch of salt
Method
Pre-heat the grill.
To make the cashew cheese blend all ingredients together using a food processor.
Place the tortilla wraps down. Evenly spread three tablespoons of cashew cheese or hummus on over the whole tortilla, and top with the chopped tomatoes and basil. Fold the tortilla over itself in half and then cut down the middle in half. Repeat with the second tortilla.
To cook place them down over the grill, and press down for about 4 minutes before turning them over and cooking on the other side.
Whilst you wait make the simple guacamole. Mash the avocado, and mix with the salt and lemon juice. Add in the chopped cherry tomatoes. To serve, place the quesadillas on a plate, top with the guacamole and enjoy!
