Chia Pudding Berry Parfaits

The Ingredients

2 cups coconut milk

1/2 cup chia seeds

2 Tbsp maple syrup

1 Tbsp agave

1 tsp vanilla extract

1/2 tsp almond extract

1/2 cup raspberries

1/2 cup blueberries

1/2 cup blackberries

1/2 cup strawberries, chopped


In a large bowl, stir together coconut milk, chia seeds, maple syrup, vanilla extract and almond extract. Let stand 10 minutes. Stir again and place in the refrigerator. 

Chill for 4 hours, or overnight.

To assemble the parfaits, layer pudding in the bottom of 4 stemless wine glasses. Layer a few raspberries, blackberries, blueberries and chopped strawberries on top. Repeat with another layer of pudding and another layer of berries. Top with a dollop of pudding and serve.
You can also make these ahead of time and chill them for a few hours.
