These coconut, almond butter, oat bars are truly divine. They are the kind of thing you can make on the spur of the moment, using really basic ingredients, and a method that even my little nephew could follow! What I love about this combination, other than the delicious creamy textures and flavours is the nutritional balance. Wonderful energising low GI carbohydrate hit from the oats, with a mammoth protein boost from the almond butter and a healthy fat kick from the Bioglan coconut oil. A truly balanced snack that will tie you over till your next meal, leaving you energised and sustained.
The Ingredients
2 cups oats
3/4 cup coconut pieces
1 cup almond butter
1/3 cup Bioglan coconut oil
1/3 – 1/2 cup coconut syrup
pinch of salt
pinch of cinnamon
Method
Preheat the oven to 190 degrees celsius.
Melt the coconut oil and combine all ingredients into a large bowl.Mix well until it’s all totally combined and you’re left with a sticky oaty dough.
Grease and line a brownie tin with parchment paper. Press the mix down so it’s evenly spread and slice slight chunks so it’s easy to separate when out the oven. Pop in the oven to bake for 25-30 minutes. Let cool before separating!
