Creamy Peanut Peanut Butter Protein Porridge

Those who know me know I have a huge addiction to nut butters. It’s probably the one food I couldn’t live without. If I could have a jar of nut butter and a spoon on me 24/7 I would be a very happy girl! Today’s recipe totally reflects my love of them, with a recipe that’s all about warmth, comfort and energy. This peanut butter protein porridge is my favourite breakfast at the moment. It’s packed with protein and energising vitamins and minerals. We melt banana, peanut butter and cinnamon into a warm mixture of oat milk and oats. As they cook they absorb all the incredible flavour from these ingredients. We then stir in some vanilla brown rice protein powder for an extra protein boost, and another touch of natural sweetness. It couldn’t be simpler to make, and you have loads of creative licence to change around ingredients (see my notes below!).

The Ingredients

3/4 cup oats

1 1/2 cups oat milk

1 heaped tablespoon peanut butter

1/2 tablespoon vanilla brown rice protein powder, I use sun warrior (optional)

Pinch of cinnamon

1/2 banana

Method

Start by adding the oats and oat milk to a saucepan over a medium heat. When the oat milk is hot add in all the other ingredients except the protein powder. Keep on stirring, and if it gets too hot, lower the heat. After a further 5 minutes stir in the protein powder. Stir until it’s absorbed into the porridge without any sitting on top. After another 5 minutes your porridge should be ready! Pour into a bowl, top with the other half of the banana, some berries or even a further dollop of peanut butter (why not!?). Enjoy!

Switch it up: If you don’t like peanut butter, use almond or cashew!
