Mint Chocolate Chip Pancakes with a Raw Chocolate Drizzle

It’s that time of year where I want every meal to be warm, hearty and comforting, and that certainly includes breakfast! During the week I’ve been feasting on big bowls of porridge or stewed fruit with coconut yoghurt which though delicious aren’t half as incredible as my weekend repertoire. I’ve re-ignited my love of pancakes and have been experimenting with lots of different varieties including the Mint Chocolate Chip Pancakes with a Chocolate drizzle that I’m sharing today. This recipe was inspired by two new kitchen staples from Udo’s Choice. I’ve been working with them on creating a fantastic breakfast that has as much nutrition as it does taste, and I’m pretty sure I’ve done just that!

I spent a very hungry Sunday morning experimenting with Udo’s Choice Beyond Green Powder and Ultimate Oil Blend. Both ingredients would be easy to chuck into a green smoothie or stir into a green juice, but the idea of something cold was out of the question. I decided on pancakes and thought the pairing of mint and the beyond greens powder would work wonderfully, the earthy tastes complimenting each other whilst the sweetness of the banana, dates and raw chocolate lift the breakfast and make it perfectly sweet.

The Beyond Greens has the equivalent to 33g of raw, fresh greens per scoop, which counts as two servings of organic vegetables….pretty impressive, and certainly validates a sweet brunch! The powder Is even more impressive when you learn just how much goodness is packed into it; The powder includes fermented greens, superfood algeas and seaweeds (spirulina and chlorella), all helping to support energy levels, immune system function and general day-to-day needs. It’s incredibly rich in Iron, which for me is one of the main benefits; While I do often feel I get a lot of greens in my diet, as a non-meat eater I do go through periods where my energy levels drop and I can feel dip in my Iron levels. I’m starting to use this powder to keep on top of it, and I make sure to blend it up in a smoothie if i’ve had a particularly un-green day… which can happen when I’m creating sweet treats for hours!

The other highlighted ingredient in this recipe is the Udo’s Choice Ultimate Oil Blend which provides a premium natural source of unprocessed, undamaged Omega 3 and 6. Lots of omega oils found naturally in foods are damaged by the over processing of so many modern day foods! The Ultimate Oil is really easy to slip into everyday dishes: mix into your salad dressings, blend into your smoothie, stir into your porridge, the opportunities are pretty endless so I’ve been getting through the bottle pretty quickly! In this recipe I’ve used it in the raw chocolate drizzle, so dreamy!

The Ingredients

1 cup oats

1/3 cup coconut flour

4 pitted medjool dates

1 cup rice milk

1 banana

1 generous handful of mint

2 tsp Udo’s Choice Beyond Greens powder

2 free-range eggs

1/4 cup cacao nibs

RAW CHOCOLATE DRIZZLE:

1/3 cup coconut oil, melted

2 tablespoon Udo’s Choice Ultimate Oil Blend

4 tablespoons Cacao Powder

4 tablespoons pure maple syrup

Method

Start by adding the oats and rice milk to your blender, blend until smooth. Now add in the pitted medjool dates, banana, mint and beyond greens powder and blend once again until smooth. Finally add in two eggs and the coconut flour and blend for the last time. Stir in the cacao nibs to the mixture

Add a little coconut oil to a pan and let melt, add in 1/4 cup of the mixture at a time, using a spoon to shape the pancake into the right shape. Cook for around 3-4 minutes on each side. Repeating with the rest of the mix. To keep the pancakes hot you can keep them on a tray in the oven on a very low heat.

Once the pancakes are done it’s time to make the chocolate sauce. Simply mix together the coconut oil, Udo’s Ultimate Oil Blend, cacao powder and maple syrup until you have a smooth chocolate sauce.

Plate the pancakes and drown in your raw chocolate drizzle. Enjoy!
