No Bake Peanut Butter Granola Bars

These no bake Peanut Butter Granola Bars are one of the easiest, yummiest, healthy snacks! I’ve become totally obsessed lately and am going through batches far, far too quickly! They are packed with protein, and really do satisfy my sweet cravings. Because we don’t bake them, I start the recipe by toasting the oats to make them crunchier and more delicious before they’re refrigerated.

The coconut oil in the recipe is actually totally optional, it does allow the bars to set far faster and gives a delicious coconut flavour… however, if you don’t have any in the house and don’t want to spend the money on buying some to then only use two tablespoons, feel free to omit it! You can then experiment with adding other crunchy elements, maybe switching up the peanuts for some shredded coconut, dried fruit or flaked almonds… but let’s face it who doesn’t love peanuts?

The Ingredients

2 cups rolled oats

1/2 cup medjool dates, pitted

1 cup peanuts

1/3 cup peanut butter (if you have a peanut allergy you can switch this for almond butter or any other nut butter)

1/3 cup raw honey/pure maple syrup

2 tablespoons coconut oil

a pinch of cinnamon (optional to add in whilst mixing)

Method

Start by preheating the oven to 180 degrees C/ 350 degrees F.

Add the oats to a lined baking tray and toast them on their own for around 5 minutes.

Pour into a large bowl with the peanuts. Now with the medjool dates add them to your food processor and blend until smooth. Add this mix into a pan with your sweetener, coconut oil and peanut butter.

Pour this over the oat mixture and mix well so everything is totally coated. Press in to a lined tray and chill in the fridge until hardened. Then cut into bars!

Store in the fridge.
