Paleo Strawberry & Lemon Scones

The Ingredients

1 3/4 cup Almond flour

3 Tbsp Coconut flour

1/4 cup coconut sugar

1 egg

1/4 cup coconut milk

3 tbsp Coconut oil, melted

1 tsp lemon zest

1 tsp fresh lemon juice

1 tsp Vanilla extract

1/2 tsp baking soda

1/4 tsp salt

1/2 cup chopped strawberries


Preheat oven to 350 degrees. Line a baking sheet with parchment paper.


In a medium bowl, stir together almond flour and coconut flour. Stir in sugar, egg, 3 Tbsp coconut milk, coconut oil, lemon zest, lemon juice, vanilla extract, baking soda and salt.


Fold the mixture until a dough forms. Fold in the strawberries gently.


Pat out dough on a piece of parchment paper until it is about 1 inch thick. Use a biscuit cutter to cut out six scones, approx. 2 to 3 inches in diameter.


Add scones to the prepare baking sheet. Brush the tops with coconut milk. 

Bake for 18 to 20 minutes, until golden brown. Remove from oven and serve warm.
