Peanut Butter, Coconut & Baobab Granola

I love peanut butter, I love coconut and of course I absolutely adore baobab – so combining these ingredients to make a nutrient packed granola was a no brainer. Brimming with antioxidants, fibre and tons of energising vitamins & minerals there couldn’t be a better way to start the day!

With peanut butter it’s incredibly important to source a completely natural brand, we don’t want any added sugar or E-numbers going into your granola! Realistically you only really need at the most three ingredients; peanuts, a pinch of salt and with a few brands a drop of oil to ease the blending – but if you’re feeling adventurous you could even make it yourself! The coconut oil is a wonderful way to bind the granola, and give it this incredible coconut essence. Then of course we use Aduna Baobab to help sweeten the granola, for this wonderful fruity flavour that whilst subtle enhances the delicious factor ten fold. With the dry ingredients feel free to experiment, though I absolutely love the combination of coconut, goji berry and pumpkin seeds! Whatever combination you choose you’ll be in for a treat. I love making a batch at the weekend for a delicious effortless week-day breakfast! Plus, who doesn’t love the smell of freshly baked granola? Let’s face it, it’s what weekends are all about!

The Ingredients

LIQUID INGREDIENTS:

1/2 cup peanut butter

1/3 cup coconut oil

3 tablespoons of agave/pure maple syrup

2 tablespoons Aduna’s Baobab

DRY INGREDIENTS:

2 cups oats

1 cup coconut chips

1/3 cup goji berries

1/3 cup pumpkin or sunflower seeds

Method

Preheat the oven to 180 degrees Celsius and line a baking tray with parchment paper.

Start by adding all the liquid ingredients in a saucepan and melting over medium heat.

Meanwhile add all the dry ingredients in to a bowl. Pour the melted liquid ingredients over the other ingredients and mix thoroughly to combine.

Lay out evenly over your baking tray, and pop in the oven for around 25 minutes, until golden brown. I recommend checking the granola every 10 minutes to make sure nothings burning!
