Peanut Butter Energy Bites

I’m in love. If it isn’t already obvious (there’s been a pretty consistent theme on my blog), then I’ll tell you…I have an undeniable addiction, some may even say an obsession, with, uh, nut butters. Yes, I’ve said it, I’m in love, and let me tell you it’s the kind of love that will never be broken!

Joking aside, I do find nut butters are the one food item I always crave, no matter what time of day or how I’m feeling. It doesn’t matter if I have a sweet or savoury tooth – the almond butter and spoon will always be out! I also find myself working them into my recipes even if they’re not necessary, just for that extra creamy taste, and an excuse to have another spoonful! For this week’s recipe, I used peanuts to make some simply incredible peanut butter & coconut energy bites! Although we’re using the whole peanut, it tastes no different from the spread, and gives you even more volume than using store bought PB, plus it’s much cheaper! These babies are the bomb. I could literally eat them all day, every day, and would still want more! They’re also super easy to make and a great on the go snack. Dancing all day, is much the same as spending hours in the office, if you don’t come prepared with something to nibble on you end up either feeling incredibly lethargic and unfocused, or start binging on a cake a colleague has brought in desperation. The key to eating well is preparation, it’s that simple!

These energy bites can be made in under 5 minutes, and will power you through the day. I make a big batch on a sunday, and store them in my fridge! The nutty protein will release slowly into your body, giving you a steady drip of energy, combatting the instant rush the medjool dates fructose would give you on their own. This combination makes for the perfect snack anytime of day!

The Ingredients

2 cups peanuts

1 cup Medjool Dates

1/2 cup coconut

1/4 tsp cinnamon

Method

Preheat your oven to 180 degrees celcius.

Place the peanuts on a roasting tray and roast for around 5-10 minutes until golden brown, but not burnt.

Add the peanuts to your food processor and pulse until the nuts are coarse (around 30 seconds).

Add the medjool dates and cinnamon process again, for around 2-3 minutes.

Shape into balls and roll is desiccated coconut. Yum! Store in the fridge for up to 2 weeks.
