Pecan & Caramel Dessert Pots

This week I’ve been seriously craving sweet foods, I’d love to say the reason is that ‘it’s that time of the month’ – but truthfully I just have a ridiculously sweet, sweet tooth! A few evenings ago I threw a girls dinner and didn’t have enough time to prep an extravagant dessert but wanted something that would satisfy all. After a prowl around my exploding food cupboard I saw the few ingredients I needed to make a totally delish dessert pot; Pecans, Dates, Coconut Oil, Pure Maple Syrup, Oat milk & Vanilla Powder…. errr, yum!! I simply roasted the pecans to bring out their incredible flavour and then added all the ingredients into my blender, put up with a lot of noise for about 2 minutes, and voila – a really great easy sweet treat.

The Ingredients

1 cup pecans

1/2 cup medjool dates

1/4 cup coconut oil

1/4 cup oat milk (depending on the strength of your blender you may need a little more. If so add in gradual volumes, a tablespoon at a time).

1/4 tsp vanilla powder (or vanilla essence)

4 tablespoons of maple syrup, raw honey or agave

Method

Preheat the oven to 190 degrees celsius. Put the pecans on a roasting tray and roast in the oven for about 5 minutes, until golden and crisp but not burnt. Depending on how hot your oven is when you put them in you may need a little longer. Meanwhile, add the coconut oil to a little pan and melt it until a liquid.

Let the pecans cool slightly before adding them to your blender with the coconut oil, dates, vanilla powder, pure maple syrup and the splash of oat milk. Then simply blend until smooth. Place them in little pots, glasses or jars and leave to set in the fridge until you’re ready to serve!
