I often feel like I’m stuck in a rut when it comes to trying new, healthy, on the go breakfasts. I tend to always lean towards a bowl of porridge or a piece of rye bread toasted with avocado or nut butter. It may be delicious but sometimes I do want something different, though still equally as easy to make. I’m a huge fan of overnight oats, as you may know, if you’ve browsed through my Naturally Sassy cookbook! This recipe for overnight oats is a little different than my usual oat recipe, incorporating the tropical flavours of pineapple and coconut. In my opinion, a match made in heaven!
The Ingredients
1 cup coconut milk (the carton kind, not the tin)
1/2 cup porridge oats
1/2 cup pineapple cut into small pieces
a handful of blueberries
a handful of toasted coconut flakes
1 teaspoon pure maple syrup/agave/raw honey
Method
Combine the porridge oats, coconut milk, pineapple pieces, blueberries and sweetener in a jar.
Mix well and keep in the fridge overnight (or for at least 2 hours prior to eating). The next morning add the coconut flakes and enjoy!
