I used to pick up a Rocky Road from the costa on the corner every Friday after ballet class, a little treat to congratulate myself for a hard weeks work. I still do the same now but with healthy treats! We always have a team meeting on a Friday to discuss next weeks objectives, I always bake something for this, I can’t help myself. This week I made a Peanut Butter, Coconut & Sultana rocky road to replicate the ones I used to love. We absolutely devoured them!
1 cup raw cacao powder
1 cup peanut butter
1 cup coconut oil
1/2 cup maple syrup
1 cup coconut pieces
1 cup sultanas
Start by melting the coconut oil over a medium-high heat. Take off the heat when melted and mix in the raw cacao powder and maple syrup, stir until smooth. Next mix in the peanut butter and do the same. Add in the coconut pieces and sultanas in and combine again.
Pour into a small tin, or tupperware.
Put in the freezer for an hour to set. Remove and cut into big pieces. Enjoy!
