12 oz udon, soba, or spaghetti
3 cups thinly sliced kale leaves
1 tsp minced ginger
2 cloves garlic, minced
2 scallions, chopped
2 Tbsp toasted sesame oil or to taste
1/2 tsp lime juice
2 Tbsp tamari or to taste
2 Tbsp toasted white or black sesame seeds
1/2 tsp crushed red pepper flakes (optional)
Bring a large pot of water to a rolling boil. Add noodles and cook according to package instructions. Drain pasta and return to the pot.
While the pasta is cooking, heat a medium skillet over medium-high heat. Add ginger, garlic, scallions, and kale once hot. Cook, stirring occasionally, for 2 to 3 minutes until the kale is cooked through.
Add the kale mixture, sesame oil, lime juice, tamari, sesame seeds, and red pepper flakes to the pasta. Toss to coat. Serve immediately with more tamari to taste.
