Valentines Parfaits

February 14th rolls around and we see love hearts, flowers and chocolate boxes everywhere, reminding us of the people we love. For me, nothing is more romantic than a delicious home cooked meal you can enjoy together. Food for me has always been something that brings people together and this day is no different. I’m sharing a recipe with you all today that is the perfect way to end your valentines meal – a valentines parfait with strawberry mousse, pomegranate and a chocolate ganache. All of my boyfriends favourite things, and possibly yours too after you give it a whirl.

 

 

The Ingredients

1 cup stawberries

1/2 cup cashew nuts

2 tablespoons coconut cream

1/4 tsp vanilla extract

1/4 cup coconut oil

1/4 cup cacao powder

3 tablespoons pure maple syrup

1 cup pomegranates (raspberries or strawberries work too!)

 

Method

Soak the cashews overnight, or for at least 2 hours. Drain the cashews and add to a blender with the strawberries, vanilla and coconut cream. Blend slowly and stop when completely smooth. There should be no lumps or bumps in the mix!

Next make the chocolate by melting the coconut oil and combining with the cacao powder and pure maple syrup, mixing until a silky smooth chocolate sauce forms.

 

To compile add your red fruit at the bottom, top with the strawberry mousse and pour over the chocolate ganache. Set in the fridge for 2 hours before serving.
